Pineapple Veggie Fried Rice

Pineapple Veggie Fried Rice

5 cups cooked rice
3 Tbsp. butter
1/3 c. minced red onion
2-4 Tbsp. chopped green onions
1/2 Tbsp. minced garlic
1/3 c. chopped carrots
8-10 oz. thinly sliced cabbage (or could use ½ bag of coleslaw mix)
3 Tbsp. soy sauce

1/2 can crushed pineapple, drained

SEASONING:
½ Tbsp. dried onion
½ tsp. garlic powder
3/4 tsp. black pepper
1/4 tsp. celery salt
1 tsp. sugar

Heat butter over medium heat and sauté onions, carrots, and cabbage until carrots are tender. Add garlic and sauté till fragrant (about 30 sec). Add cooked rice, pineapple, soy sauce, and seasoning to taste (I only used a generous sprinkle of seasoning). Garnish with green onions.

  1. My measurements are kind of approximate, as I had to keep tweaking the original recipe I had till it was good... I do think this would be awesome with some teriyaki chicken in it (or on the side) or some shrimp :)
